Thank you so much for the experience we had at your fantastic class on Saturday. The way you conducted the class from the gentile inclusion of attendees, to delegating tasks, teaching skills and imparting knowledge was relaxed and entertaining. It certainly has inspired me to appreciate Moroccan cuisine and have since stocked up on cardamom pods, coriander seeds and filo.

Many thanks for the wonderful Cooking Class on Wednesday, Kerrin and I had a great time! Our families are very keen for us to try out some of the recipes after reading the collection we prepared. It was also good fun to meet so many interesting people and enjoy conversation, together with delicious food and wine around your dining table, in your beautiful home, with magnificent views all around. Thank you for looking after us all so well. The whole experience really was such a special treat.

I have been meaning to email to say thanks for the lesson the other week, Mark and I thouroughly enjoyed ourselves. Mark made the Moroccan prawns and did the Lamb cutlets over the weekend, our friends were very impressed! I will keep an eye on the upcoming courses and hopefully book in for another one soon.

I just wanted to send you an email to thank you so much for your spanish class on Sunday, it really made our trip to the coast and my friends and I thought you were the most lovely friendly and informative person so thank you. We have definitely shared our experiences both with my aunt in brisbane and our friends and hope they get a chance to go along to a class one day. We even made the prune goats cheese and prosciutto sticks for our family before we left so you have been very inspiring. Thanks again.

I joined you for your Greek class a couple of weeks ago and thoroughly enjoyed it. From the yummy rhubarb cake on welcome to the final lunch, it was a terrific 4 hours. I picked up some neat tips too – particularly the garlic in oil.
The outside is a credit to David. As we are on acreage, I know what is involved.
Finally, I’ve suggested your school to my neighbour who is looking for a cooking school experience as a gift, so you might see another “Beechmontian” at some stage!

I had such a lovely time at your place on Saturday. Thank you for making us feel so welcome and sharing your beautiful home and garden with us, as well as the fun of learning some new things in the kitchen. I loved the duck and prune dish and the chocolate mousse is the best I’ve ever had!
I bought some rhubarb and avocadoes from the place you recommended. The avocadoes are still ripening. I cooked up the rhubarb and it tastes delicious but it has a very strong chalky texture. Do you know what causes that? Is it something I did wrong?
May I have the recipe for the rhubarb slice you made for us for Morning Tea, please?
Do you have a custard recipe that you like for piping into the choux pastries?

Thank you for referring Libby Timmins to us for accommodation. They were all very excited about the class and couldn’t speak more highly of their day. They were very impressed that you went to a special effort to include their request for gluten free.

A very big thank you to you and your darling mum June, for making Dave’s birthday surprise cooking class last weekend an absolute success and a most enjoyable day for all.
Everyone in the group really enjoyed the experience in the kitchen and opened their minds up to trying a few different dishes. Colin made the risotto the next day! We were impressed with the pizzas and confirms that you don’t need a pizza stone or pizza oven to produce gourmet pizzas.

I just want to let you know that we invited the family for a “French Meal” last weekend and we cooked every dish you showed us except the “Snapper en Papillote” (We simply ran out of steam and time)
Our dinner party was a great personal success for us, as we swallowed our fear and misgivings and tackled the quail, the souflee and the Crepes Suzette, the Pissalardiere, the Pate and Salade Cherve.
Our souflee was not as high as yours (of course) but it was very light and delicious and since our guests had not seen your masterpiece, they didn’t know any better. We were just delighted that it tasted so good. Next time we will put more mixture into each ramikin! Maybe that will make it look bigger?????????
We had a bad moment with the orange sauce for the crepes. We melted the sugar in the pan but it turned to instant sugary toffee when we added the orange juice. What did we do wrong???
I hate to confess that we quickly threw away the toffee lump, added more castor sugar to the hot juice, stirred til it melted , added the butter and served with orange segments. Nobody realised that it wasn’t right (except us!! ) It tasted good!
All in all, we had a lovely evening, felt quite “good” about our new skills, and sang your praises all night. I hope your ears were tingling with pride!!!! We hope to do another course next year and bring some of the males in the family, who love to cook.

I have attended three classes with Terri and each class has been awesome. Each time I am impressed with how Terri manages to teach us so many different dishes, explaining every aspect without anybody feeling overwhelmed. With each class I take away with me not only amazing recipes but an understanding of so many cooking fundamentals that I’ve never seen explained e.g. how to fold in whipped egg whites, how to make a white sauce properly… These fundamentals have benefited so many of my other recipes.
I’m all about the food and sitting down to a spectacular meal of the food you’ve just cooked with a nice glass of wine looking out over Terri’s garden and view of the valley is the perfect way to finish each class.
I can’t wait for the upcoming classes I’ve signed up for and have no reservation in recommending these classes to any of my friends and family.

I also wanted to say congratulations on running such a professional, well organised, hands on, informative, educational and fun cooking school. You provided an interesting array of tastes incorporating great tips and methods and anyone attending could not go home uninspired.
Well done and I am so thrilled the Mountain has such a high calibre cooking school, I will certainly pass the word around.

My parents no longer need ‘things’ as birthday presents because they have everything they need. So I spend a lot of time looking for unusual ways to treat them. This is why I took my mum to tambourine cooking school for her birthday and I couldn’t have picked a better experience. The house/school is BEAUTIFUL!! And Terri and her helpers are so incredibly welcoming and friendly. The cooking isn’t too difficult and if you’re a bit scared like me you can do more watching than participating and still enjoy the finished product! The day for us was a fifty fifty split with about 2 hours watching and cooking then the following 2 hours enjoying lunch served to the table by Terri herself while we all relax and chat with the others attending the class. We were fortunate to have a very interesting mix if people at the table which meant that we had good conversation, amazing food, lovely local wine and an incredible view! Cannot recommend this experience more highly!
Just a little note to thank you for the fabulous Cooking School Experience with you last Saturday. It was sensational and I haven’t stopped raving about this to friends and family and look forward to trying some of the recipe’s at home.
