Think about quail, olives, artichokes, sardines, mussels, anchovies, hard sheeps cheese, choritzo, caramalised red onions, smoked paprika and lots of capsicums and heirloom tomatoes. In the classes we will make about 10-12 tapas and share them on the verandah overlooking the views to the scenic rim.

What a great weekend I just had attending the cooking demos at the festival. Some of of Australia’s great chefs were demonstrating their favorite dishes. If I had to pick a favorite (s), itwas 2 French inspired dishes, one was a beetroot tart with goat cheese mousse and another a poached snapper with confitt mushrooms and tomatoes. Some chefs did some “Heston” style dishes that were amazing to see. Also there was a lot of Spanish influence in the dishes the chefs cooked, which has given me lots of inspiration and ideas that I cant wait to share in the new Tapas menus starting next week. I also loved Valli Little (the Delicious editor) her recipes were the most practical and easily duplicated.

Those that have already been to the classes have thoroughly enjoy the local wines from Witches Falls winery. Their wines are continually being named in top 10 lists and win medals at shows. Their members day is on Sunday the 22nd May and it is complimentary!!!! It is a picnic style gathering with entertainment starting at 11am. I will be assisting with the catering, a BBQ including gourmet sausages with home made relishes and caramelised onions to compliment the outstanding Pinot Noir. And to acompany the Wild Ferment Chardonnay a succulent Morrocan Spiced chicken kebab. Phone 5545 2609 for details. www.witchesfalls.com.au Bring along your chairs and I will see you there.

And what a show it was, ”Salty”his original head chef from his early restaurant days were cooking in tandem on a huge stage with Debra Hutton as the host. It moved along at a fast and humorous pace, and very enjoyable. It gave me lots of new ideas and inspiration for new seafood menus.

I was wondering why after another successful cooking class why people enjoy it so much and keep coming back. I think it is the great location and the wonderful local produce on Mt Tamborine. Having a great location with fabulous garden and views helps, but I think it is Witches Falls Wines, Witches Chaise cheese, Inglewood organic chicken, fresh seafood from the trawlers, organic fruit , herbs and vegetables from the local farmers. I am very lucky to be able to spoil my guests with the best of everything. Thank you all for all for your return visits.
