			<content:encoded><![CDATA[<p>This date and mascarpone flan has been very popular over the last couple of weeks, is it a great recipe or are the participants in the class very talented? Its both as long as its made with love. Make short crust pastry using -1.5cups of plain flour, half of a cup of almond meal, one third of a cup icing sugar, 150 gm of butter, one whole egg and one yolk. Bake blind. The filling is 12 fresh dates cut in half and soaked in Cointreau, lay them on the bottom of the pastry, then pour over a custard made with 250 gm tub of mascarpone, half a cup of cream, 2 tbsp sugar, 2 eggs and a scraped vanilla bean and 1 tbsp of cornflour. Bake at 180 for about 15 to 20 min until slightly golden and set. (Thanks to Fiona and Tracey last week and Kim and Angela today for making it so well, David is very happy for the leftovers!!)</p>

I love having all these happy people come for a day out at the cooking school. I love my job!!!</p>

If I had to pick a favorite (s), itwas 2 French inspired dishes, one was a beetroot tart with goat cheese mousse and another a poached snapper with confitt mushrooms and tomatoes. Some chefs did some &#8220;Heston&#8221; style dishes that were amazing to see. Also there was a lot of Spanish influence in the dishes the chefs cooked, which has given me lots of inspiration and ideas that I cant wait to share in the new Tapas menus starting next week. I also loved Valli Little (the Delicious editor) her recipes were the most practical and easily duplicated.</p>

I will be assisting with the catering, a BBQ including gourmet sausages with home made relishes and caramelised onions to compliment the outstanding Pinot Noir.
