G’day Terri, just wanted
you to know I’ve been having a wonderful time recreating the lovely things we
made at the recent Moroccan class. I’ve just taken the date & walnut (I only
had pecans) pastries out of the oven & am really pleased how they’ve turned
out….just wanted to check that there were no spices in that???? I put a bit of
cinnamon in some of them as I felt it needed a bit of spice….I also kept back
some mixture & rolled them in walnut sized balls & tossed them in
coconut & popped them in the fridge…good for Rob’s lunchbox.
We had Atlantic salmon
last night with the Chermoula rub & baked them…delicious! The hit of the
week has been Bahrat spice mix on lamb cutlets with Fattoush
salad…heaven!
After I left you last
Thurs I dropped into the spice shop & got a few things as well as some of
their Dukkahs….not spicy enough for my taste so look forward to making your
recipe, just loved that Dukkah & carrot dip of yours!

Just a short note to thankyou for such a great start to the
New Year coming to your class. You have created an experience for people to gain
skills , think about fresh produce and that it can be enjoyable and sustainable
to pursue.
Anyway for me personally , the timing was perfect to be
excited about food once again . Off to Vietnam next week and cooking class
booked!Will experiment with bean dishes this year.

We had a fantastic time up there and will be sure to return again sometime soon

I just wanted to let you know that Cheyenne and I really enjoyed
ourselves at the ‘Modern Australia’ class we attended on Nov 5th.
The food was excellent, great value for
money but I most appreciated the ambience and fantastic conversation that we
shared with the other class members. I have already mentioned my experience with
some of my colleagues and I believe that one of the girls will be looking into
making a booking for a class with her mother before Christmas

very much appreciated not having to tidy up after ourselves!

yesterday. We think you have a great philosophy to fresh food from the region

Hi Terri,
David and I would like to thank you for a most wonderful day we had last Sunday doing your Italian cooking school. We learnt a lot of skills and how different flavours come together. It has made us both want to experiment a little further with the knowledge that you gave to us during the various courses you created.
Tonight’s menu will be started with the mussels and fennel followed by simple fish with a different salad if I can find a good recipe to go with fish. I am going to make the chocolate mousse soon too, but will have to wait until I have other guests as it is a bit too rich to eat it all ourselves. We both loved the pear with goats cheese and that is high on our list of to do. I will make some good balsamic with the recipe you gave us as well.
Thank you also for telling us where to find ingredients on the Coast and Brisbane, we will be buying quite a few new things for our pantry cupboard. I would also like to thank you for inviting us to your beautiful home and being able to eat and drink some very nice wines with great company thrown in.
I was telling my girlfriend in Sydney about the day and she is going to come up very soon and we will both do another school . Hope to hear about your newsletters and anything about food that interests me greatly.

Thank you so much for the cooking experience – Steve and I enjoyed our day very much (12 out of 10 experience)
We have already passed on feedback to friends and family and they are keen to make it a part of their visit also.
My sister-in-law will be up in February and my son and daughter in law in March –

Thank you Terri for the magnificent Italian lunch we prepared and indulged in on Sunday. My husband enjoyed it too. Our group chose the French class and we thoroughly enjoyed every minute of our day – thank you Terri for sharing your tips, ideas, recipes and the food was stunning. We have already booked our next class being Middle Eastern. I would highly recommend any of Terri’s classes, not only for a fantastic gourmet experience but value for money and by far the best cooking class I have ever been too. I’ll also be back to purchase more of your superb Beetroot Relish!
